Maryland Crab Cake Recipe
CLASSIC
This recipe lets you enjoy pure, sweet crabmeat.
Ingredients:
- 1 lb lump crabmeat of blue crab
- ¼ cup mayonnaise
- 2 eggs
- 1 tsp. Old Bay seasoning
- 1 tsp. Dijon mustard
- ½ tsp. Worcestershire sauce
- 1tsp. fresh lemon juice
- 1 ¼ cup fresh bread crumbs
- 4 tsp. unsalted butter
- 2 tsp. olive oil
- ¼ tsp. salt
- Lemon wedges
Method
- Put drained and free of shells crabmeat in a bowl and gently break up the lumps. Set aside.
- In other bowl whisk together eggs, Old Bay seasoning, Dijon mustard, Worcestershire sauce, lemon juice, salt.
- Pour the mixture in the bowl with crabmeat, sprinkle with bread crumbs and mix all ingredients thoroughly but gently. Don’t turn the mixture into mash.
- Cover the bowl with foil and chill the mixture in a refrigerator for an hour and a half.
- Preheat together butter and oil over medium heat.
- Shape the mixture into cakes and place them on a skillet.
- Cook on each side for 5 minutes.
- Serve on the platter with lemon wages for squeezing.
BOARDWALK STYLE
Ingredients:
- ½ lb lump crabmeat
- ¼ lb ricotta
- ½ sweet peppers,
- 4 green onions
- 3 tbsp. chopped fresh dill or parsley
- 3 tbsp. pine nuts
- ¼ cup grated Parmesan
- 1 egg
- ½ tsp. Worcestershire sauce
- ½ cup bread crumbs
Preparation:
- Gently chop crabmeat, but do not grind it.
- Mix together crabmeat, fresh herbs, ricotta, Parmesan, well-beaten egg and chopped sweet pepper.
- Add Worcestershire sauce, chopped onion and nuts. Nuts should be pre-roasted and crushed.
- Place the mixture in the refrigerator for at least half an hour.
- Form patties of desired form and size; roll them in breadcrumbs.
- Preheat oil in a frying pan and cook patties on both sides for 2-3 minutes over medium heat.
- Serve on a hamburger bun.
